Tacos are one of my most favourite comfort foods and this Caribbean spin is just absolutely mouth watering.

And if you want to try a different protein sources you can also substitute the fish with steak or chicken – makes 2 or 3 tacos equaling 1 serving.
2 Tacos are about 318 calories with a macro breakdown of 31 gram of Protein, 29 grams of Carbs, and 9 grams of Dietary Fats which make for a great meal on plan!
My clients will be the first to tell you that these tacos are delicious and fit into their weight loss plans seamlessly.
Ingredients – Homemade Salsa:
- 1–2 medium-sized tomatoes
- ½ small yellow onion
- ½ small jalapeño pepper
- 1 small minced clove garlic
- ¼ cup cilantro
- ½ juice lime
- ¼ tsp sea salt
- ¼ tsp fresh ground black pepper
- 1 tsp of your favourite hot sauce
- ¼ cup low-sodium vegetable broth
Directions:
- Chop all ingredients
- Cook tomato, onion, jalapeño and garlic for 3 minutes
- Pour ingredients in blender and add cilantro, lime juice and vegetable broth
- Or process in a food processor
Ingredients – Fish Tacos:
- 3–5 oz cod (pin bones removed)
- ¼ tsp ground cumin
- ¼ tsp sea salt
- ¼ tsp fresh ground black pepper
- 2–3 small whole grain corn tortillas
- ½ cup shredded green or red cabbage
- ½ sliced avocado
- 1 small diced tomato
Directions
- Heat 1 tsp of olive oil over medium heat
- Place cod in the skillet and cook 2 to 3 minutes each side
- Build tacos – place cod on tortilla
- Top with cabbage, tomato, and avocado
- Spoon tomato salsa on top
Garnish with cilantro and lemon juice and eat up!
