Here’s a Super Bowl Recipe that’s guaranteed to be a hit! In my household football is a staple, and with the game on tomorrow, there always has to be a bevy of yummy food.
So I asked one of my girlfriends Sabrina Virdee (who is also a Nutritionist and busy mama) to put together a healthy Chowder-Themed recipe for the New England Patriots…
I don’t know if you’ve been to New England but Clam Chowder is one of their signature dishes so she created a Coconut Shrimp Corn Chowder.
Coconut Shrimp Corn Chowder

Coconut Shrimp Corn Chowder
1 medium sweet onion, chopped
2 teaspoons coconut oil
1/4 teaspoon cayenne pepper
1/4 teaspoon smoked paprika
2 cups chicken bone broth
1 package (10 ounces) frozen corn
1/4 teaspoon sea salt
1/4 teaspoon ground black peppe
1 can coconut milk
1 lbs uncooked shrimp, peeled and deveined
Juice of one lime
3 tablespoons fresh cilantro – minced
1 ripe avocado, peeled and cubed
How To Prepare:
- In a saucepan, sauté onion in oil clear and tender. Stir in the broth, corn, cayenne, paprika, sea salt and pepper. Bring to a boil. Reduce the heat; and simmer, uncovered, for 5 minutes. Stir in coconut milk.
- In a food processor, process soup in batches until blended. Return all to pan. Add shrimp; cook and stir over medium heat until shrimp turn pink. Stir in lime juice and cilantro. Top with cubed avocado.[/fusion_text][fusion_text]
